Achar Chillie Soombat (1 litre jar)

This one is arguably extinct. One does not wonder why. It takes laborious hours, de-seeding the hot green chillies (and watching that the seeds do not fly into your eyes!) and; preparing and sunning (and watching the weather forecast) the grated papaya. 

Honestly, refreshingly delightful on its own, as an appetizer! But it could be paired with almost any dish for that extra kick to the senses!
